My New Favorite Dinner

Even I can make this taste good!

Easiest Chicken Dish Ever: Onion Chicken

1) Preheat oven to 350.

2) Take large baking dish and fill with about 1 inch of water.

3) Slice an onion (like you are going to put it on a burger) and lay the slices flat in the water.


4)  Place boneless skinless chicken breasts on top of the onion.

5) Generously season the top side of your chicken breasts. (I use a lot of salt and pepper, garlic salt, lemony something, and paprika.  You can use whatever spices you want.)


6) Bake at 350 for 45ish minutes.

Easiest Side Dish Ever: Spinach and New Potatoes


1) Cut some new potatoes in to fourths and throw them in some boiling water.  (I cut them in halves, but they cook faster if you cut them in to smaller pieces.  They are also easier to eat that way. :)

2) Throw about a table spoon of butter and some baby spinach in a mixing bowl / serving dish.  (These are the same thing in our house.)


3) Add the potatoes when they finished cooking and ready to eat. (The potatoes melt the butter and cook the spinach to the perfect consistency.)  Salt and pepper, of course.

4) ENJOY!


I've gotten in to the habit of making this on Sundays with four chicken breasts.  We eat two for dinner, and then we have two for sandwiches or leftovers as is for the week.  It keeps pretty well, and the chicken is even yummy on a sandwich cold.
