Pie in a Jar

Last weekend, I hosted a couple's shower for my friends Hallie and Chase who are getting married in November.  I love a good old fashion cookout, but due to busy schedules, I couldn't quite make it happen.  So I did the next best thing and picked up BBQ from Albert G's.  (If you like potato salad, even just a little bit, you should probably head straight there for dinner tonight.)  We had enough food to feed an army, but I made sure there was something sweet to top it off.

Pie in a Jar: So easy, even Patti can do it!

1) Buy canning jars.  If you can find the short ones, those will be best.  I could not and bought the regular-sized mason jars instead and filled them half(ish) full. (Find them at Reasor's in 12 packs.)
2) Buy Pillsbury crust, because there is no such crust in the world that is better.  Not even when Oma makes it from scratch.
3) Make/buy pie filling of any variety.

4) Take the lid of the jar and cut out a circle in the pie crust to be used as a "pie topper".
5) Smoosh the crust along the bottom and sides of jar.
6) Fill jar with filling.
7) Place "pie topper" on top.
8) Freeze with lid on or cook with lid off (375 for 45 minutes; frozen pies take 55 minutes).
9) Enjoy!

Hey, Coke, should we come up with a creative name for this post?

Last weekend, Nick, Rick, Chance, and I headed west to visit some of our favorite Sooners in the Mile High City.  On the agenda was some red dirt music, bottomless mimosas, a day in the park, and a baseball game.  Other than a suspected inappropriate piece of artwork on the side of Coke's car, it was a fantastic weekend!  Here are a few pics.

Holy krow, did we have fun!





It was a trip for the ages, but I will need about a year to recover before I can do it again.  As we were leaving, the Southwest staff reminded us of all our great times that weekend in pictures along the tunnell...

Summer Happenings

Whew!  I sure have been busy!  No time to post.  Here is what I have been up to!  I hope your summer has been as awesome as mine.  :)

Nick moved in and cooked me dessert!  We are getting everything situated.  More on this coming soon!



 I'm building a mobile app for the business college at TU!  It has consumed my days at work for the last month, but I am really excited about it!  It will launch very soon!  :)

We went to the lake for Rick's birthday!  It was a GREAT time.  They rented a pontoon and a cabin for the night!  WOO HOO for Rick's birthday!




Obviously, that is the short version.  Can't wait to tell y'all about our weekend trip to Denver!  This may be a 2-post day, so check back later!
