Mexican Goodness

Several weeks ago, my New Mexican friend received a little taste of home... a box of New Mexican Green Chilis!  She was kind enough to share several with me and even gave me the recipe for some KILLER rellenos.  Delish!

 To put you in the mood, you will need some guac and Santitas.

Things you need:
1) Green Chilils (real ones; not poblanos)
2) Block of Colby Jack cheese (some cut into small strips and some shredded)
3) Egg and Milk mixture
4) Flour, corn starch, salt and pepper mixture (Ball park these.  They will be used to bread the stuffed peppers.  Add whatever spices you like to the flour mixture.)
5) A hot boyfriend to do the grilling
Instructions:
1) Put the peppers on the grill until the skin turns black
2) Remove the stems and seeds
3) Run peppers under cool water, removing the skin and remaining seeds. (It has been suggested that you wear gloves.)
4) Stuff peppers with slices of cheese.

5) Roll stuffed peppers in egg and milk mixture; then cover in flour mixture.
6) Pan fry using canola oil (it's less fatty) (several minutes on each side), only flipping once.  If you flip the peppers more than that, the cheese will fall out.
7) Remove from oil and lightly cover with shredded cheese.
8) Enjoy the cheesy goodness!

US Open Extravaganza

I know this is several weeks overdue, but the pics are still just as much fun!  Here are a few shots from Mom's and my trip to the Big Apple for some FANTASTIC tennis!



First, we went for lunch and mimosas at the Southside Seaport.  That's the Brooklyn Bridge... we think.

 The NY Stock Exchange was just a block from our hotel.

 Construction of the monument at Ground Zero.  Also just a block from us.

 St. Paul's: The church that remained unharmed in the attacks on 9/11.  It housed many of the rescue workers during the recovery efforts.

 The Broadway Theater from "Promises, Promises" with JUST JACK!

This statue stood in front of the World Trade Center.  It was damaged 9/11 and moved to Battery Park nearby.

It was a GREAT trip!  Saw cool things, visited family, and witnessed some really great tennis!  Thanks to everyone who helped us get there.  Until next time, NYC...
